American Fried Rice

Here's a simple recipe for ketchup fried rice, along with a suggestion for making a vegetarian version:


Ingredients:

  • 2 cups cooked rice (preferably chilled or day-old)

  • 2 tablespoons vegetable oil

  • 2 cloves garlic, minced

  • 1 small onion, diced

  • 1 carrot, diced

  • 1/2 cup frozen peas

  • 2 eggs, beaten

  • 3 tablespoons ketchup

  • 2 tablespoons soy sauce

  • Salt and pepper to taste

  • Optional: sliced green onions for garnish


Instructions:
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.

  2. Add the minced garlic and diced onion to the skillet and sauté until fragrant and softened, about 2-3 minutes.

  3. Add the diced carrot and frozen peas to the skillet and cook for another 2-3 minutes, until the vegetables are tender.

  4. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Allow the eggs to cook for a minute or so until they start to set, then scramble them until fully cooked.

  5. Add the cooked rice to the skillet, breaking up any clumps, and stir-fry with the vegetables and eggs until heated through.

  6. In a small bowl, mix together the ketchup and soy sauce. Pour the sauce over the fried rice and stir to combine, ensuring that the rice is evenly coated.

  7. Season the fried rice with salt and pepper to taste.

  8. Cook for an additional 2-3 minutes, stirring occasionally, until everything is well combined and heated through.

  9. Remove the skillet from the heat and garnish with sliced green onions if desired.

  10. Serve hot and enjoy your delicious ketchup fried rice!

For a vegetarian version, you can omit the eggs and add more vegetables like bell peppers, mushrooms, or broccoli to make it hearty and flavorful. You can also add tofu or tempeh for extra protein. Just be sure to adjust the seasoning accordingly to suit your taste preferences.
